I’m not sure I completely understand what they are and how they work, but I’ve seen a lot of references to them throughout the book. Can someone explain what a way creature is?

Honestly, they’re pretty much anything you want them to be, based on your interpretation of the Way. In our game the Way has a very dark aspect to it and touches the Void (a ghostly dimension mirroring real space) and Way creatures are life-hungry apparitions or corporeal monstrosities that are infused with Way energies. Go with what you think is cool.
the Cowboy Bebop episode 11 “Toys in the Attic” (“Heavy Rock of the Dark Night”) might give some inspiration as to what encounter with way creature will look like
As above, many details in S&V are painted in broad strokes and left for GMs to fill in specifics, though there are a few references in the setting text. In my game, the main way they have come into play is via The Agony, where they are sort of unpleasant symbiotes/parasites. My group has faced off with Agony members with living weapons (“bioware”) grafted to their bodies.
You can get pretty body-horrific with them or go the space angels route. It all depends on your agenda.
Similarly, I was reminded/considering the Djinn in the Coriolis setting (which, of course, reminds me of the Djinn in Tim Powers’ Declare).
AD Kohler, absolutely stuff from Coriolis. I draw heavily from that setting. It’s amazing. Fading Suns as well.
