I did not get to try S&V yet but I run Blades with 5 players and it works fine.
In general you should consider the higher amount of total stress the players can take compared to a smaller group. I do usually throw a few extra complications at them when all players are present to counter this issue.
I do also like to make them encounter several problems at the same time. You have 2 or 3 players (group A) working on a problem while the other players (group B) sit idle? This is the right moment for an extra complication to be thrown at group B, if possible linked to the problem of group A so you can switch back and forth between them.
This keeps all player involved while also making sure that stress is kind of evenly distributed amongst the players.
