It’s not exactly the industry standard, but I find Pages for Mac does pretty much everything I need.
InDesign is probably the best option if you can justify the cost (I believe that’s what John used to create the originals).
I use Scribus, a free, open source program akin to InDesign.
I use PowerPoint because I have PowerPoint-fu. I’ve been able to make pretty elaborate sheets for other games with it, and it’s pretty direct in use.
